This is a really easy and fun dessert recipe that you can make tonight. It includes a combination of different fruits, along with a dressing that seeps into every little nook and cranny the fruit has to offer. The best part is, all it takes to put this entire thing together is a bit of prep work and some blending of the sauce. That’s it.
The Recipe
You can use any fruit you want for this recipe, as long as it’s firm and won’t fall apart when mixing it. I went with almost exactly what the recipe called for. I used blackberries, strawberries, grapes, melon, apple and pineapple. I would recommend blueberry, raspberry, pear and ingredients like that as well. It’s not difficult to get creative with this one.
The dressing is really good. It’s a combination of bananas, Greek yogurt, maple syrup or honey, lemon juice and nutmeg. Again, perhaps next time, I’ll add some allspice, ginger, cinnamon or something similar. So many spices can complement a dessert like this.
Ingredients
Serves: 8
2 Cups Pineapple Chunks
1 Cup Cantaloupe Cubes
1 Cup Honeydew Melon Cubes
1 Cup Fresh Blackberries
1 Cup Fresh Strawberries, Sliced
1 Cup Seedless Red Grapes
1 Apple, Cored and Diced
2 Medium Sized Bananas, Sliced
1/2 Cup Plain Greek Yorgurt
2 Tablespoons Pure Maple Syrup or Honey
1 Tablespoon Lemon Juice
1/4 Teaspoon Ground Nutmeg
Step-by-Step Instructions
I’d like to thank Favorite Brand Name Recipes for their Holiday Cookbook. I pulled this recipe from it and I have to tell you that the rest of this book looks pretty awesome. I managed to buy this little treasure on sale at Reny’s last week for only $5. It was during an after (way after) Christmas sale. It currently costs $20 on Amazon. I know this because I looked, just to make sure I got a deal.
Prep the Fruit
The first thing I did was wash and prep all the fruit. I started off by measuring out the blackberries and the grapes.
Next, I sliced up all the strawberries and the apple.
And finally, I measured out the pineapple, cut up the cantaloupe and sliced the bananas.
Combine the Fruit
In a large bowl, combine all the fruit, except for the bananas. Mix everything together.
Make the Dressing
In a medium sized bowl, add the banana, yogurt, maple syrup or honey, lemon juice and nutmeg.
With a hand blender, blend these ingredients together. You can also use a regular blender for this step, it’s just easier with a hand blender. This is what the result should look like.
Toss Everything Together & Serve
Finally, you can add the dressing to the mixed fruit and mix everything up. Then, divide the fruit between bowls and serve. Enjoy!
