There’s an extraordinarily flavorful dish in Greece that’s created with a flaky crust, feta cheese, parsley, and mint. It’s a long time favorite and Greeks, as well as millions of people worldwide, have been enjoying it for centuries. The only problem with it, is that it’s not exactly mobile. The simpler the recipe and more tasty the dish, the better. When I first saw this recipe in Mary Berry’s cookbook, I didn’t think much of it. The dish consists of only a few ingredients. Honey & Vinegar Glazed Carrots with Cranberries Recipe by the Lodge Cast Iron Cookbook
I’ve got a handful of side dishes that I prepare every Thanksgiving. I consider them perfect sides, meaning, they need no modifications, will stand the test of time, and are excellent. I’ve only received rave reviews for these sides and that’s why I keep them around. This carrot dish is one of them. First, the color looks great on a plate. Second, it’s always good to enjoy carrots at harvest time (or shortly thereafter), and third, the way these carrots are cooked is a definite winner. They’re actually not regular ol’ carrots. In this dish, the flavor of the carrots is infused with the flavors of cranberries, honey, and white wine vinegar. There’s a tang to them. Also, because the carrots are roasted in a cast iron skillet, they’re softened and the inherent sweetness is revealed. It really is a great Thanksgiving dinner dish. Apples & Bread
With September coming to a close, the season is changing fast. Activities are changing and moods are changing. While Laura and I are continuing on with our daily walks in the cool autumn air, we find ourselves noticing different things in our area. These days, it’s the colorful leaves falling to the ground as well as how the landscape is differing with the quick loss of foliage. I’ve also begun my yearly cooking regimen. Bourbon & Sweet Maple Glazed Salmon Recipe
Like I said in the beginning of this post, where the heck has this recipe been all my life? This is one of those dishes that will knock the socks off of anyone you serve it to. It’s that good. If you don’t believe me, just take a look at the ingredients; salmon, maple syrup, bourbon, soy sauce, vinegar, orange juice, cayenne pepper, and more. It’s no joke. I highly recommend making this dish if you’ve got some friends over and you’re grilling out. You’ll be the star of the town. What a great idea – sweet potato cakes. I love the fact that it’s so easy to prepare a quick snack, starter, or side dish so quickly. As far as this recipe goes, I have to say it’s a winner. The sauce is wonderfully tasty and so simple to put together. Just a few minutes for that. Leek Fritters Recipe by Yotam Ottolenghi’s Plenty
I love fritters and apparently many other folks around the world do too. This post is one of my most popular. I pulled the recipe from Yotam Ottolenghi’s cookbook, called “Plenty.” Yotam has some incredible recipes in the book and I’m glad I bought it. As for this dish, it’s wonderful. Fritters are fun because they’re so versatile. While this recipe calls for onions, leeks, yogurt, spices, and lots of herbs, there really are no rules when it comes to preparing them. As long as you use the correct proportions of eggs, flour, and other binding ingredients, you should be fine. These are some of my favorite types of salads. I’ve probably written this dozens of times, but that doesn’t mean it’s any less true.
