I tackled my first apple based recipe yesterday and boy was it delicious. I didn’t eat the entire cake; I merely enjoyed just one piece and I have to tell you, it was out of this world. So good. I haven’t eaten a dessert like this in such a long time. The cake was sweet, moist, and simply delicious.
The Recipe
I don’t know if I told you this, but I seemed to have acquired over 80 pounds of apples this year. There’s even more than that if I include the apples from the trees right here on my property. Needless to say, I have a lot of apples. I acquired most of the apples from a local orchard and I’m currently trying to use them up in one way or another.
This apple bundt cake recipe is everything you’d want it to be. It uses about four decent sized apples, so you know there’s going to be some great flavor on the interior. There’s tons of sweet and there’s tons of moisture as well. The outer crust has that caramelized texture, where it’s slightly harder then the interior. This makes for a nice distinction between the two and some very pleasant contrast to boot. Overall, this apple cake is one of the best dessert recipes I have prepared this year. It’s really, really good.
Ingredients
Makes: 1 Bundt Cake
4 Medium Sized Apples, Cored, Peeled and Diced
1 Tablespoon White Sugar
1 Teaspoon Ground Cinnamon
3 Cups All-Purpose Flour
3 Teaspoons Baking Powder
1/2 Teaspoon Salt
2 Cups White Sugar
1 Cup Vegetable Oil
1/4 Cup Orange Juice
2 1/2 Teaspoons Vanilla Extract
4 Eggs
1 Cup Chopped Walnuts
Confectioners Sugar for Dusting
Step-by-Step Instructions

Pre-Heat Oven
Arrange your oven racks so one of them is in the center position. Then, pre-heat the oven to 350°.
Prepare Apple Mixture
Add the diced apples to a medium sized bowl. Then, add the one tablespoon sugar and one teaspoon ground cinnamon to it and stir to combine.
Remember, these apple pieces are going to maintain their shapes inside of the cake, so you should dice according to what you want to see in the final result. I’d go for a 1/2 inch dice.
Set the apples aside for later use.
Create Flour Mixture
In another medium sized bowl, combine the flour, baking soda and salt. Make sure these ingredients are mixed together well.
Create Sugar Mixture
In a large bowl, add the two cups of white sugar, oil, orange juice, vanilla extract and eggs. Mix these ingredients together well.
Combine Ingredients
Add the flour mixture to the large bowl that has the sugar mixture in it. Mix these ingredients together well. Then, add the chopped walnuts to the bowl as well and mix them into everything else.
Pour the Batter
Grease a bundt cake pan with butter. Then, pour 1/3 of the batter into the pan, followed by half of the apples. Then, cover the apples with another 1/3 of the batter. On top of that, add the remaining apples. Finally, cover everything with the final 1/3 batter. That should use up everything you have just prepared.
Bake the Cake
Place the pan on the center rack of your oven. Set the timer to 60 minutes. Mine was absolutely perfect at this time. Begin to check yours at 55 minutes by sticking a toothpick into the top to see if it comes out clean. If it does, the cake is finished. When it is, remove it from the oven to cool.
Cool & Top with Sugar
After the cake has cooled for at least 20 minutes, hold a plate or a wire rack to the top of the bundt pan and flip the cake over. At that point, you should have a wonderful looking dessert.
Add a bit of confectioners sugar to a sifter and sift some on top of the cake until it has a light dusting.
When that’s finished, cut into pieces and serve. Enjoy!
